1½ cup all-purpose flour ½ cup whole-wheat flour ½ cup quick cook oats ¼ cup ground flax seed 1½ tsp. baking powder ½ tsp. baking soda 1½ tsp. cinnamon ½ tsp. each nutmeg, allspice, and cloves 1/3 cup brown sugar 1 cup mashed banana 1/3 cup unsweetened applesauce 1 omega-3 egg ½ cup skim milk or soy milk ½ tsp. vanilla ½ cup raisins
Mix flour through brown sugar in a large bowl. Mix banana through vanilla in a medium bowl. Add banana mixture to the flour mixture. Mix just until moist then fold in raisins. Place batter evenly in a muffin pan coated with no-stick cooking spray and bake at 350º for 20 minutes. Cool muffins in the pan for 5 minutes, then remove from pan and allow to cool completely on a wire rack. Makes 12 regular muffins or 24 mini muffins.
