• 1 Tortilla Swirl (see recipe below)
• 1 apple with 1 tablespoon natural peanut or almond butter
• 1 cup skim or 1% milk

Tortilla Swirl

• 1 whole wheat flour tortilla
• 2 tablespoons softened Neufchatel cheese (reduced-fat cream cheese)
• 2-3 ounces thinly sliced turkey
• 2 large romaine lettuce leaves
• 2 slices tomato
• 2 slices avocado (dip in lemon juice to avoid turning brown)
• 1 tablespoon sunflower seeds

On the top of the tortilla, spread a thin layer of Neufchatel cheese over the entire surface. Then place evenly over the surface of the tortilla: thinly sliced turkey, romaine lettuce leaves, sliced tomato, sliced avocado, and sunflower seeds. Roll up burrito fashion, pressing tightly. Secure with toothpick. Chill for approximately 30 minutes. Slice into cross sectional pieces. Place in covered container to avoid drying out.

Tortillas originated in Mexico. During the Spanish conquest in the 1500s, conquerors discovered that Mexican nativesmashed soaked kernels of corn, also known as maize, into a dough to create "little cakes." In 1520, Hernando Cortez sent a letter to the King of Spain describing public market places in Mexico. In the letter, Cortez talked about how the natives were "embracing the necessaries of life," and one way they did this was by making the maize bread. The bread was later given the name tortilla (which means "little cake") by the Spanish. Learn more
