Healthy sack lunch: Mock tuna salad with apple and milk
- 1 mock tuna salad sandwich (can also serve with crackers, pita bread, or whole wheat tortilla)
- 1 apple
- 1 cup skim or 1% milk
Mock Tuna Salad Sandwich (makes 4 servings)
- 1 19-ounce can garbanzo beans, drained and mashed
- 2 tbs. reduced-fat mayonnaise
- 2 tsp. spicy brown mustard
- 1 tbs. sweet pickle relish
- 2 green onions, chopped
- Salt and pepper to taste
In a medium bowl, combine all ingredients and mix well. Spread on whole wheat bread, whole wheat pita bread, whole wheat tortilla, or serve with whole grain crackers.
